In the fall of 1996, he moved to the exclusive island of Anguilla. Known and loved by discerning palates, his cuisine has often been described as "genius" by those who have sampled his fare. Chef Marc has worked with restaurants like The Straw Hat Restaurant, Cove Castle Resort, Aureole, and Malliouhana, Auberge Resorts Collection where he was revered for his gastronomic ingenuity. 

Now Head Chef at Ember since 2018, Chef Marc has made his restaurant a must-visit on any hungry traveller’s list. This landmark restaurant in Anguilla takes a simple approach to creating great food using live fire cooking. Located at the old Luna Rosa, Chef Marc has transformed the space into a high-end, chic restaurant. Wide open wooden doors lead to a long outdoor terrace with breathtaking views of the Atlantic Ocean and Sandy Island in the distance.  

Ember has plenty of inside dining space, as well as bar seating. The bar is fully stocked with an excellent selection of wines and cocktails. The best cocktail to try would be The Ember Delight: a signature mixture of Captain Morgan, Malibu, mango puree and lime juice to realize a tropical taste explosion!
